Pairs perfectly with meats such as lamb, game and feathers, red meats, pasta and cheeses such as brie or parmesan.
Tasting
The dress is ruby in color with purple highlights. The intense and ample nose gives way to notes of red fruits, chocolate and mint. The palate is balanced, the tannins are velvety. The finish is complex and long.
Winemaking
The grapes were harvested at different times and vinified separately by variety. This process allowed fermentation and maceration to be conducted specifically for each grape variety, improving its aromatic characteristics and the softness of the tannins. The fermentation temperature never exceeded 25 ° C and pumping was carried out in order to guarantee the extraction of soft and delicate tannins.
At the end of the malolactic fermentation, which ended at the end of November, the wine began its aging period which ended at the end of spring. Fattoria Le Maestrelle was bottled at the end of May 2021.
