Castello Della Sala
The name Cervaro comes from the noble family that owned the Castello della Sala in the 14th century: the Monaldeschi della Cervara.
Chardonnay grapes combined with a small portion of Grechetto for a wine designed to mature over time and represent the elegance and complexity of a unique place.
Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barrels with the first vintage in 1985.

Winemaking
It is produced with Chardonnay and Grechetto grapes; fermentation and aging (5 months) take place in barrels, then the wine rests in the bottle for about 10 months in the medieval cellars of the Château.
